Oysters Rockefeller

Schmacon Oysters – Rockefeller Style

Serves 2-3


12 blue point oysters, shucked 
1 pound baby spinach
8 strips Schmacon, chopped
1 clove garlic
3 Tbsp grated Parmesan Cheese 
Juice of one lemon
Kosher salt and white pepper
6 oz. Hollandaise sauce

Schmacon Oysters - Rockefeller Style


Shuck oysters and place on baking tray. Sauté chopped Schmacon, chopped garlic, and spinach. Add lemon juice, a pinch of salt and white pepper to mixture. Add Parmesan cheese. Place a healthy Tablespoon of spinach mixture over each oyster.
Place under broiler for 6-8 minutes or until liquid is beginning to boil. Spoon Hollandaise sauce over top and serve!!!
